Ingredients
  

1 pound ground beef or turkey

1 packet taco seasoning

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup pico de gallo (diced tomatoes, onions, and cilantro)

1 small can black olives, sliced (optional)

1 package mini phyllo pastry cups (or wonton wrappers)

Fresh cilantro leaves for garnish

Optional toppings: sour cream, sliced jalapeños

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula. Drain any excess fat.

      Sprinkle the taco seasoning over the cooked meat and follow the packet instructions, usually adding a bit of water. Stir and let it simmer for about 5 minutes until the mixture is well combined and thickened.

        While the meat is simmering, prepare the phyllo pastry cups by arranging them on a baking sheet. If using wonton wrappers, lightly spray them with cooking oil, and press them into muffin tins to form cups.

          Spoon a layer of the taco meat into each pastry cup, filling them about three-quarters full.

            Top each filled cup with a dollop of ranch dressing, followed by a sprinkle of shredded cheddar cheese and a spoonful of pico de gallo. Add sliced black olives on top if using.

              Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and the cups are golden brown.

                Remove from oven and let cool slightly before garnishing with fresh cilantro leaves and your choice of additional toppings (sour cream or jalapeños).
