2 cups cheese tortellini (fresh or frozen)

1 lb ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, canned, or frozen)

1 cup black beans, rinsed and drained

1 cup chicken or vegetable broth

1 cup shredded cheddar cheese

Olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for topping)

Sour cream (optional, for serving)

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Add the minced garlic and cook for another minute, until fragrant.

      Add the ground turkey or beef to the pot. Cook, breaking it apart with a spatula, until browned and cooked through. Drain excess fat if necessary.

        Sprinkle the taco seasoning over the meat and stir until evenly coated.

          Pour in the diced tomatoes (with juices), corn, black beans, and chicken broth. Stir well to combine.

            Bring the mixture to a boil, then reduce heat to a simmer.

              Add the cheese tortellini to the pot and cover with a lid. Cook for about 8-10 minutes, stirring occasionally, until the tortellini are cooked through and tender.

                Remove from heat and stir in the shredded cheddar cheese until melted and creamy.

                  Serve hot, garnished with fresh cilantro and sliced jalapeños. Offer sour cream on the side for those who want a creamy touch.
