3/4 cup buttermilk (or milk with 1 tablespoon vinegar added)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda until well combined.

      Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs with some pea-sized pieces remaining.

        If using honey, mix it in with the buttermilk in a separate bowl.

          Pour the buttermilk mixture into the flour and butter combination. Stir gently with a fork until just combined; do not overmix. The dough should be slightly sticky.

            Turn the dough out onto a lightly floured surface. Gently fold the dough over itself a few times (about 5-6 times) to create layers without overworking it.

              Pat the dough into a rectangle about 1 inch thick. Using a sharp knife or biscuit cutter, cut out biscuits. Re-roll the scraps to cut more biscuits if needed.
