1 cup shredded cheddar cheese

1 cup cream cheese, softened

1/2 cup diced jalapeños (fresh or pickled)

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust for spiciness)

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

1 large egg

1 cup breadcrumbs (Italian style works great)

Oil for frying (canola or vegetable)

Instructions
 

Prepare Cheese Mixture: In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, diced jalapeños, garlic powder, onion powder, and cayenne pepper. Mix until well combined.

    Form Bites: Take a spoonful of the cheese mixture and roll it into small balls (about the size of a golf ball). Place them on a baking sheet lined with parchment paper. Repeat until all the mixture is used. Chill the bites in the freezer for about 30 minutes to help them firm up.

      Prepare Breading Station: In a separate bowl, whisk together the flour, baking powder, and salt. In another bowl, mix together the milk and egg. Finally, place the breadcrumbs in a third bowl.

        Bread Bites: Take each cheese ball from the freezer. First, coat it in the flour mixture, shaking off excess, then dip it in the milk and egg mixture, and finally roll it in breadcrumbs. Make sure each bite is fully coated. Return the coated bites to the baking sheet.

          Heat Oil: In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C). You can test the oil by dropping a small piece of bread in; it should sizzle and rise to the top.

            Fry Bites: Carefully place a few cheese bites in the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until they are golden brown and crispy. Use a slotted spoon to remove them and place them on a plate lined with paper towels to absorb excess oil.

              Serve: Serve the Rattlesnake Bites hot with a side of ranch dressing, spicy dipping sauce, or a squeeze of fresh lime juice for an extra kick.
