Ingredients
  

1 lb chicken breast, thinly sliced into strips

2 tablespoons brown sugar

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon ground coriander

1 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust for spice preference)

1 tablespoon lime juice

Wooden skewers (soaked in water for 30 minutes)

Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine brown sugar, soy sauce, fish sauce, sesame oil, minced garlic, grated ginger, turmeric, coriander, cumin, cayenne pepper, and lime juice. Add the chicken strips and mix well. Cover and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

    Prepare the Peanut Sauce: In a separate bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red pepper flakes (if using) until smooth. Adjust the consistency with more coconut milk if necessary. Set aside.

      Assemble the Skewers: Thread the marinated chicken strips onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

        Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking. Grill the chicken skewers for about 5-7 minutes per side, or until cooked through and slightly charred. You can also broil them in the oven if a grill isn’t available.

          Serve: Arrange the chicken satay skewers on a serving platter. Drizzle with peanut sauce and garnish with chopped peanuts and fresh cilantro. Serve additional peanut sauce on the side for dipping.
