1 cup wild rice, rinsed and drained

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup diced carrots

1 cup diced celery

1 cup chopped mushrooms (cremini or button)

1/2 cup dried cranberries

1/2 cup pecans, roughly chopped

1 teaspoon dried thyme

1 teaspoon dried sage

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, combine the wild rice with vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and has absorbed the liquid.

    While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes, until soft and translucent.

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the diced carrots and celery to the skillet, cooking for about 5-6 minutes until they begin to soften.

          Next, add the chopped mushrooms, dried cranberries, thyme, sage, salt, and pepper to the skillet. Cook for another 5-7 minutes until the mushrooms release their moisture and everything is well combined.

            Once the wild rice is done, add it to the skillet and mix thoroughly, allowing all the flavors to meld together. Adjust seasoning as necessary.

              Finally, stir in the chopped pecans for an added crunch and nutty flavor. Remove from heat.

                Serve the wild rice warm, garnished with fresh parsley.
