Ingredients
  

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1/2 cup milk

3 tablespoons unsalted butter

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh chives or parsley, chopped for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes, vegetable broth, dried thyme, and smoked paprika. Bring the mixture to a boil, then reduce the heat and let simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

        Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a regular blender and blend until smooth.

          Return the soup to low heat, and stir in the heavy cream and milk. Season with salt and pepper to taste.

            If using, add the shredded cheddar cheese, stirring until melted and well combined.

              Serve hot, garnished with freshly chopped chives or parsley for a burst of flavor.
