1 pound ground beef (preferably 80/20)

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms, sliced

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

1 teaspoon paprika

Salt and pepper to taste

8 ounces egg noodles

Fresh parsley, chopped (for garnish)

Olive oil (for cooking)

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.

    Brown the Ground Beef: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
