1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

2 cups frozen mixed vegetables (carrots, peas, corn, green beans)

1 can (10.5 oz) cream of mushroom soup

1 can (14.5 oz) diced tomatoes, undrained

1 tsp Worcestershire sauce

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

4 cups shredded potatoes (fresh or frozen)

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium-high heat, add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break the beef into chunks. Drain excess fat if necessary.

      Add Aromatics: To the beef, add the chopped onion and minced garlic. Cook for another 3-4 minutes until the onion is translucent.

        Mix in Vegetables: Stir in the frozen mixed vegetables, cream of mushroom soup, diced tomatoes (with juice), Worcestershire sauce, smoked paprika, black pepper, and salt. Mix thoroughly and let it simmer for about 5 minutes.

          Layer the Casserole: In a greased 9x13-inch baking dish, spread half of the shredded potatoes evenly on the bottom. Pour the beef and vegetable mixture over the potatoes, spreading it out evenly. Top with the remaining shredded potatoes.

            Bake: Cover the casserole tightly with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and sprinkle cheddar cheese on top. Bake uncovered for an additional 15-20 minutes or until the cheese is melted and bubbly and the potatoes are golden brown.
