1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 packet taco seasoning (or homemade blend)

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

4 large flour tortillas

1 cup fresh spinach leaves

1/2 cup sour cream (for serving)

1/4 cup fresh cilantro, chopped (for garnish)

Olive oil (for cooking)

In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and bell peppers, sautéing for about 3-4 minutes until they soften.

    Increase the heat to medium-high, then add the ground beef, breaking it up with a spatula. Cook until browned, around 5-7 minutes. Drain excess fat if necessary.

      Stir in the taco seasoning, followed by the cream cheese. Mix until thoroughly combined. Allow it to cook for an additional 2 minutes, or until the cheese is melted and the mixture is creamy.

        Add salt and pepper to taste, and remove the skillet from heat. Stir in the shredded cheddar cheese until melted and combined.
