Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

½ cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

½ cup fresh cilantro, chopped

4 large flour tortillas

Lime wedges for serving

Instructions

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for better flavor).

Grill the Chicken: Preheat your grill or grilling pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes on each side, or until fully cooked and no longer pink in the center (internal temperature should reach 165°F). Let the chicken rest for 5 minutes, then slice it into strips.

Prepare the Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, and half of the chipotle ranch dressing. Mix well to combine.

Assemble the Burritos: Lay out a flour tortilla on a clean surface. In the center, spread ¼ of the rice and bean mixture, followed by a portion of the grilled chicken, a sprinkle of shredded cheese, a few slices of avocado, and a bit of chopped cilantro. Drizzle with additional chipotle ranch dressing if desired.

Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll the bottom up towards the top to create a tight burrito. Repeat for the remaining tortillas and fillings.

Grill the Burritos: Optional – Place the burritos seam side down on the grill for 2-3 minutes per side to achieve a crispy exterior and warm the insides.

Serve: Slice the burritos in half and serve with lime wedges and extra chipotle ranch dressing on the side.
