2 large Fuji apples, cored and thinly sliced

1 tablespoon lemon juice

1/4 cup brown sugar

1 teaspoon cinnamon

1/4 cup unsalted butter

1 sheet of puff pastry, thawed

4 ounces Brie cheese, sliced thinly

1 egg (for egg wash)

Sea salt, for sprinkling

Fresh thyme leaves (optional, for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, toss the thinly sliced apples with lemon juice, brown sugar, and cinnamon until well combined. Set aside to allow the flavors to meld.

      In a skillet over medium heat, melt the butter. Add the apple mixture and cook for about 5 minutes, stirring gently until the apples are tender but not mushy. Remove from heat and let it cool slightly.

        Roll out the puff pastry sheet on a lightly floured surface to smooth out any creases. Cut the puff pastry into 4 equal squares.

          Using a knife, lightly score a border around each square, about 1/2 inch in from the edge. Be careful not to cut all the way through.

            Place a few slices of Brie cheese in the center of each pastry square, creating a small nest. Top with the sautéed apples, ensuring each tart has a good amount of the mixture.

              Gently fold the edges of the pastry squares over the filling to create a slight border around the tarts.

                Beat the egg and brush it over the edges of the pastry for a golden finish. Sprinkle a pinch of sea salt on top.

                  Bake the tarts in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.

                    Remove from the oven, let cool for a few minutes, then garnish with fresh thyme leaves if desired. Serve warm and enjoy this delightful upside-down treat!
