4 medium apples (preferably Granny Smith or Honeycrisp), peeled and thinly sliced

1 cup all-purpose flour

1/2 cup almond flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs

3/4 cup maple syrup or agave nectar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons unsweetened applesauce

1/4 cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper to prevent sticking.

    In a mixing bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg (if using). Set this dry mixture aside.

      In a separate large bowl, whisk together the eggs, maple syrup (or agave nectar), vanilla extract, and applesauce until well combined.

        Gradually add the dry flour mixture to the wet ingredients, stirring gently until fully incorporated but do not overmix.

          Fold in the sliced apples, ensuring they are evenly coated with the batter. If using, add the chopped walnuts or pecans at this stage.

            Pour the mixture into the prepared cake pan and smooth the top with a spatula.

              Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                Once baked, let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
