1 lb (450g) beef stew meat, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, diced

2 garlic cloves, minced

2 large carrots, chopped

1 bell pepper (red or green), diced

2 cups celery, chopped

2 medium potatoes, diced

1 can (14 oz) diced tomatoes

2 tablespoons tomato paste

4 cups beef broth

1 tablespoon paprika (preferably sweet)

1 teaspoon dried thyme

1 teaspoon caraway seeds

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Heat the Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

    Brown the Beef: Add the beef stew meat in batches, browning on all sides for about 5-7 minutes. Remove the beef from the pot and set aside.

      Sauté Vegetables: In the same pot, add the diced onion and garlic, sautéing for 2-3 minutes until they become translucent.

        Add Carrots and Peppers: Stir in the chopped carrots and diced bell pepper, cooking for another 4-5 minutes until they begin to soften.

          Introduce Remaining Ingredients: Add the celery, diced potatoes, diced tomatoes (with juice), tomato paste, and the browned beef back into the pot.

            Pour in Broth: Carefully stir in the beef broth, ensuring all ingredients are well combined.

              Season: Add paprika, thyme, caraway seeds, salt, and pepper. Stir again to mix all the spices evenly.

                Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld together. Stir occasionally.
