1 ½ cups strong brewed coffee (cooled)

4 large egg yolks

½ cup granulated sugar

2 cups mascarpone cheese (room temperature)

1 cup heavy whipping cream

1 teaspoon vanilla extract

24 ladyfinger cookies

2 tablespoons cocoa powder

Dark chocolate shavings (for garnish)

Instructions
 

In a large mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is smooth and pale. This will take about 3-4 minutes.

    Add the mascarpone cheese and vanilla extract to the egg mixture, and gently fold them in until fully combined and creamy. Be careful not to overmix.

      In another bowl, whip the heavy cream until stiff peaks form. Gradually fold the whipped cream into the mascarpone mixture until fully incorporated, creating a light and airy consistency.

        Dip each ladyfinger into the cooled coffee for about 2 seconds on each side, making sure they’re moist but not soggy.

          Arrange half of the dipped ladyfingers in a single layer at the bottom of a 9x9 inch or similar-sized serving dish.

            Spread half of the mascarpone mixture over the ladyfingers evenly.

              Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture on top.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to meld and the dessert to set.

                  Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings for garnish.
