Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
Add the minced garlic and dried oregano, cooking for an additional 1-2 minutes until fragrant.
Pour in the vegetable broth and diced tomatoes (with their juices). Bring the mixture to a gentle simmer.
Once simmering, add the cheese tortellini and cook according to package instructions (usually about 5-7 minutes for fresh tortellini).
Stir in the chopped basil, and season with salt and pepper to taste. Let the soup simmer for another 2-3 minutes to meld the flavors together.
Ladle the soup into bowls and top with grated Parmesan cheese if desired.
Notes
Serve hot garnished with extra basil leaves and a sprinkle of Parmesan on top for an elegant touch.
