200g pasta (penne or fusilli)

1 cup cottage cheese

2 cups cherry tomatoes, halved

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta.

    Prepare the Tomato Mixture: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add Cherry Tomatoes: Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally until they soften and release their juices.

        Season the Sauce: Stir in the dried oregano and basil. Season with salt and pepper to taste. If the sauce looks too thick, add a splash of the reserved pasta water to reach your desired consistency.

          Combine with Cottage Cheese: Remove the skillet from heat. Fold in the cottage cheese until well combined with the tomato mixture.

            Mix with Pasta: Add the drained pasta to the skillet and gently toss everything together until the pasta is coated in the sauce. If needed, add more reserved pasta water to facilitate mixing.

              Serve: Divide the pasta among serving plates. Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
