2 cups ripe tomatoes, diced

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup fresh basil, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

2 large eggs, beaten

1/4 cup milk

Begin by dicing the ripe tomatoes and placing them in a colander to drain excess moisture for about 15 minutes. This will prevent the fritters from being too watery.

    In a large mixing bowl, whisk together the flour, cornmeal, garlic powder, onion powder, baking powder, salt, pepper, and grated Parmesan cheese (if using).

      In a separate bowl, combine the beaten eggs and milk. Whisk until smooth.

        Add the drained tomatoes and fresh basil to the dry ingredients, then pour in the egg and milk mixture. Stir gently until just combined; the batter should be thick but still able to drop from a spoon.

          Heat about 1/4 inch of oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the fritter batter into the hot oil (about 2 tablespoons per fritter).
