Ingredients

2 cups ripe tomatoes, chopped (or 1 can crushed tomatoes)

4 oz cream cheese, softened

2 tbsp olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional, for a kick)

Salt and pepper, to taste

Fresh basil leaves, for garnish

¼ cup grated Parmesan cheese (optional)

Cooked pasta of your choice (spaghetti, penne, etc.)

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent.

Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Be careful not to burn the garlic.

Tomato Time: Add the chopped tomatoes (or crushed tomatoes) to the skillet. Stir well and bring to a simmer.

Season It: Add the dried oregano, dried basil, red pepper flakes, salt, and pepper. Let the sauce simmer for about 10-12 minutes, stirring occasionally, until it thickens slightly.

Creamy Goodness: Lower the heat and add the softened cream cheese to the skillet. Stir until fully melted and incorporated into the sauce, creating a creamy consistency.

Taste and Adjust: Taste the sauce and adjust seasoning if necessary. If desired, stir in grated Parmesan cheese for an extra layer of flavor.

Combine: Toss the cooked pasta into the sauce, ensuring it is well coated. Heat through for another 2 minutes.

Serve: Divide the pasta into bowls, garnish with fresh basil leaves and additional Parmesan cheese if desired. Enjoy your creamy tomato bliss!
