12 oz pasta (penne or fusilli)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 lb Italian sausage (mild or spicy, casings removed)

1 can (14 oz) diced tomatoes (with juice)

4 cups fresh spinach

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Sausage: Push the onion and garlic to the side of the skillet and add the sausage. Break it apart with a wooden spoon and cook until browned and cooked through, about 5-7 minutes.

        Add Tomatoes and Spinach: Stir in the diced tomatoes (with their juice), dried basil, and oregano. Bring to a simmer, then fold in the fresh spinach. Cook until the spinach wilts, about 2-3 minutes.

          Combine the Pasta: Add the cooked pasta to the skillet, tossing to combine with the sauce. If the mixture seems dry, add a bit of the reserved pasta cooking water to achieve desired consistency. Season with salt and pepper to taste.

            Serve & Garnish: Serve immediately, garnished with grated Parmesan cheese and fresh basil leaves if desired.
