12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 bell pepper (red or yellow), diced

1/4 red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/2 cup Italian dressing

2 tablespoons lemon juice

Salt and pepper to taste

1/4 teaspoon garlic powder

1/4 teaspoon chili flakes (optional for extra spice)

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, typically around 3-5 minutes until they float to the top. Drain and rinse under cold water to stop the cooking process.
