4 large eggs

2 medium potatoes, peeled and thinly sliced

1 medium onion, thinly sliced

1/4 cup olive oil

Salt and pepper to taste

Fresh parsley, for garnish

In a large frying pan, heat the olive oil over medium heat. Once hot, add the sliced potatoes and onion. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and slightly golden.

    Once cooked, drain the potatoes and onions in a colander, reserving some of the oil for later use.

      In a large mixing bowl, whisk the eggs and season them with salt and pepper.

        Add the cooked potato and onion mixture into the whisked eggs and gently fold until well combined.

          Wipe the frying pan clean and add 2 tablespoons of the reserved oil back into the pan. Heat it over medium-low heat.

            Pour the egg and potato mixture into the pan, spreading it evenly. Cook for about 5-7 minutes until the edges start to set.

              Once the bottom is set and lightly golden, carefully flip the tortilla using a large plate. Cook the other side for an additional 5-7 minutes until fully cooked through.

                Transfer the tortilla to a serving plate and let it cool for a few minutes before slicing.

                  Garnish with fresh parsley before serving.
