4 (6 oz) grouper fillets

1 cup coconut milk

2 tbsp fresh ginger, grated

1-2 tbsp red chili flakes (adjust for spice level)

1 tbsp fish sauce

2 tbsp lime juice (freshly squeezed)

1 tbsp brown sugar

1 tbsp olive oil

1 ripe mango, diced (for garnish)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Cooked jasmine rice, for serving

Instructions
 

Marinate the Grouper: Pat the grouper fillets dry with paper towels. Season both sides with salt and pepper. In a small bowl, combine olive oil, lime juice, and a pinch of salt. Brush this mixture over the grouper fillets and let marinate for 15-20 minutes.

    Prepare the Sauce: In a medium saucepan, combine coconut milk, grated ginger, red chili flakes, fish sauce, and brown sugar. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Let it simmer for about 10 minutes to allow the flavors to meld. Taste and adjust seasoning if necessary (add more chili for spice).

      Cook the Grouper: In a large skillet over medium-high heat, add a little olive oil. Once hot, add the marinated grouper fillets to the skillet. Cook for about 4-5 minutes on each side, or until the fish flakes easily and is no longer translucent.
