8 oz elbow macaroni

1 can (12 oz) tuna in water, drained and flaked

1/2 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

1/2 cup celery, finely chopped

1/4 cup red onion, finely diced

1/2 cup sweet pickle relish

1/4 cup bell pepper, diced (any color)

Salt and black pepper, to taste

1/2 tsp garlic powder

1/2 tsp onion powder

Fresh parsley, for garnish (optional)

Instructions
 

Boil a large pot of salted water and cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

      Add the drained and flaked tuna, chopped celery, diced red onion, sweet pickle relish, and diced bell pepper into the bowl. Gently fold the ingredients together.

        Add the cooled macaroni to the mixing bowl and stir everything together until the macaroni is evenly coated with the dressing and all ingredients are incorporated.

          Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

            Refrigerate the tuna macaroni salad for at least 30 minutes to allow the flavors to meld.

              Before serving, give it a good stir and garnish with freshly chopped parsley if desired.
