Ingredients

1 lb ground turkey

1 packet taco seasoning

1 can (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

½ cup diced tomatoes (fresh or canned)

¼ cup chopped green onions

1 avocado, sliced

Salsa and sour cream (for serving)

Fresh cilantro (for garnish)

Cooking spray or olive oil

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with cooking spray or olive oil.

In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Stir in the taco seasoning and follow the packet instructions, adding water if required. Allow to simmer for an additional 5 minutes. Remove from heat and let cool slightly.

Unroll the crescent roll dough and arrange the triangles in a circle on the baking sheet, overlapping them so that the wide ends are in the center and the points are facing outward, creating a sunburst shape.

Spoon the turkey mixture evenly over the wide ends of the crescent dough.

Sprinkle the shredded cheddar cheese, black beans, corn, diced tomatoes, and green onions evenly over the turkey.

Fold the pointed ends of the dough over the filling to create a ring. Tuck the points under the dough to secure them (it doesn’t have to be perfect).

Bake in the preheated oven for 20-25 minutes, or until the dough is golden brown and puffed.

Remove from the oven and let it cool for a few minutes. Garnish with slices of avocado, freshly chopped cilantro, and serve with salsa and sour cream on the side.
