Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried rosemary

1 teaspoon dried thyme

4 cups vegetable broth

2 (15-ounce) cans white beans (cannellini or great northern), drained and rinsed

1 (14-ounce) can diced tomatoes

2 cups kale, chopped

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.

    Add the minced garlic, diced carrots, and celery to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender.

      Sprinkle in the dried rosemary and thyme, and stir to combine for an additional minute to release their flavors.

        Pour in the vegetable broth and add the rinsed white beans and diced tomatoes. Bring the mixture to a gentle simmer.

          Let the soup simmer for about 15-20 minutes to allow the flavors to meld together.

            Stir in the chopped kale and simmer for an additional 5 minutes until the kale is wilted and tender.

              Season the soup with salt and pepper to taste and squeeze in the juice of one lemon for brightness.

                Remove from heat and let it sit for a few minutes before serving.
