4 large flour tortillas

1 pound ground beef

6 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced pickles

1/4 cup diced red onion

1/4 cup ketchup

1/4 cup mustard

Salt and pepper to taste

Olive oil for frying

Instructions
 

In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Season with salt and pepper to taste. Drain any excess fat and set aside to cool slightly.

    Lay one tortilla flat on a clean surface. Spread a thin layer of ketchup and mustard over the tortilla.

      Sprinkle a quarter of the shredded cheddar and mozzarella cheese evenly over the tortilla.

        Add about a quarter of the cooked ground beef and sprinkle with crumbled bacon, diced pickles, and diced red onion.

          Carefully roll the tortilla tightly from one edge, folding in the sides as you go to contain the filling. Repeat with the remaining tortillas and fillings.

            In a skillet, heat a drizzle of olive oil over medium heat. Place the rolled tortillas seam-side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.

              Once the roll-ups are golden and crunchy, remove them from the skillet and let cool slightly on a paper towel.

                Slice each roll-up into bite-sized pieces and serve warm.
