4 medium-sized russet potatoes

1/2 cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup grated sharp cheddar cheese

1/2 cup grated mozzarella cheese

1/4 cup sour cream (for drizzling)

2 tablespoons fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    Clean the potatoes thoroughly and pat them dry. Use a sharp knife to slice the potatoes thinly (about 1/8 inch apart) without cutting all the way through. Place wooden chopsticks or a spatula on either side of each potato to guide your cuts and prevent slicing all the way through.

      In a small bowl, mix the melted butter with garlic powder, onion powder, smoked paprika, salt, and pepper.

        Brush the butter mixture generously over the potatoes, ensuring it seeps into the slices. Reserve some of the butter mixture for later.

          Place the potatoes on a baking sheet lined with parchment paper.

            Bake in the preheated oven for 30-35 minutes, or until the potatoes begin to soften.

              Once softened, remove the potatoes from the oven and sprinkle the grated cheddar and mozzarella cheese between the slices of each potato. Drizzle the reserved butter mixture over the top of the potatoes.

                Return the potatoes to the oven and bake for an additional 15-20 minutes, until the cheese has melted and is bubbly, and the potatoes are tender.

                  Remove from oven and let cool for a few minutes. Drizzle sour cream over the top and sprinkle with fresh chives before serving.
