Ingredients

For the Secret Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon sweet pickle relish

1 teaspoon smoked paprika

Salt and pepper, to taste

For the Patty Melt:

1 pound ground beef (80/20 blend)

Salt and black pepper, to taste

1 tablespoon Worcestershire sauce

4 slices of rye bread

4 slices of Swiss cheese

1 medium onion, thinly sliced

2 tablespoons butter

Fresh parsley, chopped for garnish (optional)

Instructions

Make the Secret Sauce:

    - In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, smoked paprika, salt, and pepper. Mix well until smooth. Adjust seasoning to taste. Set aside.

      Prepare the Patty:

        - In a large bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Mix gently, being careful not to overwork the meat. Form into 4 equal-sized patties.

          Cook the Onions:

            - In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 10-15 minutes. Remove from skillet and set aside.

              Cook the Patties:

                - In the same skillet, add the remaining butter and increase the heat to medium-high. Once hot, add the patties and cook for about 3-4 minutes on one side until browned. Flip the patties, place a slice of Swiss cheese on each patty, and cook for another 3-4 minutes, or until the cheese is melted and the patty is cooked to your desired doneness.

                  Assemble the Patty Melt:

                    - Spread a layer of secret sauce on one side of each slice of rye bread. On two of the slices, layer a patty with melted cheese and a generous portion of caramelized onions. Top with the other slice of bread, sauce side down.

                      Grill the Patty Melt:

                        - Wipe the skillet clean and return to medium heat. Place the assembled patties in the skillet. Cook for about 3-4 minutes per side until the bread is golden brown and crispy, pressing down lightly with a spatula to help the bread stick together.

                          Serve:

                            - Remove from the skillet and let cool for a minute. Cut in half and serve with extra secret sauce on the side for dipping. Garnish with chopped parsley if desired.
