1 pound breakfast sausage (mild or spicy, your choice)

8 large eggs

2 cups shredded sharp cheddar cheese

1 cup milk

1 medium onion, diced

1 bell pepper (any color), diced

4 cups frozen hash browns (thawed)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with cooking spray or butter.

    Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes. Remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add a bit of oil if needed, then add the diced onion and bell pepper. Sauté for 4-5 minutes until the vegetables are softened.

        Mix the Eggs: In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until fully combined.

          Combine Ingredients: In the greased casserole dish, layer the thawed hash browns evenly across the bottom. Then, add the cooked sausage and sautéed vegetables on top. Pour the egg mixture over the sausage and veggies, making sure everything is evenly distributed.

            Add Cheese: Finally, sprinkle the shredded cheddar cheese over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is golden and bubbly.

                Cool and Serve: Once baked, remove from the oven and let it cool for about 5-10 minutes. Garnish with freshly chopped parsley before slicing into squares and serving.
