Vanilla Cupcakes with Berry

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

½ cup whole milk

1 ½ teaspoons baking powder

¼ teaspoon salt

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons honey (for the berry swirl)

1 tablespoon lemon juice (for the berry swirl)

Powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.

    In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

      Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating it with the whole milk. Begin and end with the flour mixture. Mix until just combined.

            In a small saucepan, combine the mixed berries, honey, and lemon juice over medium heat. Cook for about 5 minutes until the berries start to soften and release their juices. Remove from heat and let cool slightly.

              Fill each cupcake liner about ¾ full with the batter. Add a teaspoon of the berry mixture into the center of each cupcake batter and gently swirl it with a toothpick to create a marbled effect.

                Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                  Allow the cupcakes to cool in the tray for 5 minutes before transferring to a wire rack to cool completely.

                    Once cooled, dust with powdered sugar before serving, if desired.
