Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

2 teaspoons vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup milk

1 cup mixed berries (blueberries, raspberries, strawberries diced)

Optional: Powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes) using an electric mixer.

Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.

Fold in Berries: Gently fold in the mixed berries into the batter, reserving a few for garnishing the top of each cupcake.

Fill Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full. Place a few reserved berries on top of each cupcake for decoration.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Finalize and Serve: Once cool, dust the tops with powdered sugar if desired and serve with extra berries on the side.

Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 12 cupcakes

                        - Presentation Tips: Arrange the cupcakes on a decorative platter and add a few sprigs of mint for a fresh touch. Serve with a side of berry compote for extra flavor!
