1 cup vital wheat gluten

1/2 cup nutritional yeast

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup vegetable broth

2 tablespoons soy sauce or tamari

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Oil for frying (coconut or vegetable oil recommended)

Prepare the Dough: In a mixing bowl, combine the vital wheat gluten, nutritional yeast, onion powder, garlic powder, smoked paprika, black pepper, and salt. Stir to evenly distribute the dry ingredients.

    Mix Wet Ingredients: In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, and apple cider vinegar. Pour this mixture into the dry ingredients.

      Knead the Dough: Mix the wet and dry ingredients until a dough forms. Knead the dough for 5-7 minutes until it becomes elastic. The mixture should be a bit chewy but not sticky.

        Shape the Rinds: Divide the dough into small bite-sized pieces, shaping them into flat, disc-like shapes to resemble traditional pork rinds.

          Boil the Rinds: In a large pot, bring salted water to a boil. Carefully add the shaped dough pieces to the boiling water and cook for about 30 minutes, or until they puff up and expand. Remove from the water and let them cool for a few minutes.

            Prepare for Frying: Heat oil in a deep skillet over medium-high heat. Make sure the oil is hot enough to fry (around 350°F or 175°C).

              Fry the Rinds: Fry the boiled dough pieces in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes on each side or until they turn golden brown and crispy.

                Drain and Cool: Remove the fried rinds with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.

                  Serve: Let the rinds cool briefly before serving. Enjoy them plain, or toss them in your favorite spice blend for extra flavor!
