1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon sriracha (adjust for spiciness)

1 tablespoon lemon juice

1 small celery stalk, finely chopped

2 green onions, finely chopped

1 tablespoon dill pickle relish

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Whole grain or gluten-free bread of your choice

Lettuce leaves for layering

Slices of tomato (optional)

Mash the Chickpeas: In a large bowl, using a fork or potato masher, mash the chickpeas until chunky but not completely smooth. You want a texture that resembles tuna salad.

    Mix the Dressing: In a separate bowl, combine the vegan mayonnaise, Dijon mustard, sriracha, and lemon juice. Whisk until smooth.

      Combine Ingredients: Add the chopped celery, green onions, dill pickle relish, garlic powder, smoked paprika, and the dressing mixture to the mashed chickpeas. Fold everything together until well combined. Taste and adjust seasoning with salt, pepper, or additional sriracha if desired.
