Ingredients

1 pre-made pie crust (store-bought or homemade)

1 cup chopped spinach

1 cup diced bell peppers (any colors)

1 cup sliced mushrooms

1 small red onion, finely chopped

3 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar or a mix of cheeses)

Salt and pepper to taste

1 teaspoon dried thyme

1/2 teaspoon garlic powder

Optional: Fresh herbs (parsley or chives) for garnish

Instructions

Preheat the oven to 375°F (190°C).

If using a pre-made pie crust, place it in a 9-inch pie dish and prick the bottom with a fork. Pre-bake the crust for 10 minutes, then set aside to cool slightly.

In a skillet over medium heat, sauté the chopped onion for about 2-3 minutes until it becomes translucent.

Add the diced bell peppers and sliced mushrooms to the skillet and sauté for another 5 minutes until they soften.

Stir in the chopped spinach and cook for about 2 more minutes until wilted. Season the mixture with salt, pepper, dried thyme, and garlic powder. Remove from heat and let cool.

In a large mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheese.

Gently fold the vegetable mixture into the egg and cream mixture until everything is well integrated.

Pour the vegetable-egg mixture into the pre-baked crust, spreading it evenly.

Bake the quiche in the preheated oven for 30-35 minutes, or until the center is set and a light golden crust has formed on the top.

Remove the quiche from the oven and let it cool for about 10-15 minutes before slicing.

                      Prep Time: 20 minutes | Total Time: 1 hour | Servings: 6-8

                        - Presentation Tips: Serve each slice on a plate and garnish with fresh herbs for a pop of color. Pair with a light salad for a full meal experience. Enjoy!
