200g unsalted butter, softened

100g icing sugar

1 teaspoon vanilla extract

200g plain flour

50g cornflour

100g chocolate, for drizzling

Pinch of salt

Raspberry or strawberry jam for filling

Edible glitter or sprinkles (optional)

Instructions
 

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

    In a large bowl, beat together the softened butter and icing sugar until the mixture is light and fluffy. This should take about 3-5 minutes using an electric mixer.

      Mix in the vanilla extract and a pinch of salt.

        Sift in the plain flour and cornflour, then gently fold the dry ingredients into the butter mixture until well combined. Be careful not to overmix.

          Transfer the dough into a piping bag fitted with a star nozzle.

            Pipe small circles (about 4 cm in diameter) onto the lined baking trays, leaving space between each whirl. You can make half of them solid and the other half with a small hole in the center for the jam.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                Allow the whirls to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

                  Once cooled, spread a small amount of jam onto the solid base of each whirl, then top with a matching whirl that has a hole.

                    Melt the chocolate in a microwave or a double boiler until smooth. Drizzle the chocolate over the assembled Viennese whirls for decoration, and sprinkle with edible glitter or sprinkles if desired.
