2 large apples, peeled, cored, and diced (such as Granny Smith or Honeycrisp)

1/2 cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon butter

1 sheet of pre-made puff pastry (thawed)

1 egg (for egg wash)

1 teaspoon vanilla extract

Store-bought caramel sauce (for drizzling)

Vanilla ice cream (for serving)

Prepare the Filling: In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender but not mushy. Remove from heat and stir in vanilla extract. Allow to cool slightly.

    Prepare Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 4 squares (approximately 6x6 inches each).

      Fill the Pastry: Spoon about 2 tablespoons of the apple mixture onto the center of each puff pastry square. Be careful not to overfill.
