4 cups of seedless watermelon, cubed

1 teaspoon culinary matcha powder

2 tablespoons honey or agave syrup

1 tablespoon fresh lime juice

1 cup coconut water

A pinch of sea salt

Fresh mint leaves for garnish

Instructions
 

In a blender, add the cubed watermelon and blend until smooth. Strain through a fine sieve or cheesecloth into a large bowl to remove pulp, if desired.

    In a small bowl, whisk the matcha powder with a few tablespoons of warm water until smooth and combined; this helps eliminate clumps.

      Pour the lime juice, honey (or agave), coconut water, and a pinch of sea salt into the strained watermelon juice. Stir well to combine.

        Add the matcha mixture to the watermelon juice and stir until fully blended. Adjust sweetness with more honey if desired.

          Chill the mixture in the refrigerator for about 20-30 minutes to enhance its refreshing quality.
