1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup cold water

1 cup granulated sugar

1/2 cup fresh raspberries (plus extra for garnish)

1/2 cup heavy cream

1 teaspoon vanilla extract

In a small saucepan, combine the sugar and 1 cup of water over medium heat. Stir until the sugar is completely dissolved to create a simple syrup. Remove from heat and let cool.

    In a blender, combine the lemon juice and raspberries. Blend on high until smooth, then strain the mixture through a fine-mesh sieve to remove the raspberry seeds, pressing down with a spatula to extract as much liquid as possible.

      In a large pitcher, combine the cooled simple syrup with the lemon-raspberry juice. Stir to combine. Taste and adjust the sweetness or tartness by adding more sugar or water if desired.

        In another bowl, whip the heavy cream using a hand mixer or stand mixer, adding the vanilla extract as you whip. Continue until soft peaks form (approximately 2-3 minutes).

          To serve, fill glasses with ice cubes and pour the pink lemonade mixture over the ice. Top each glass with a generous dollop of the whipped cream mixture.

            Garnish with a few whole raspberries and a slice of lemon on the rim of the glass.
