Ingredients
  

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust to taste)

2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

4 cups chicken broth

1 can (4 oz) diced green chilies

1 cup corn (fresh or frozen)

1 cup heavy cream or coconut milk

Salt and pepper to taste

Fresh cilantro, for garnish

Crumbled queso fresco or shredded cheese, for topping (optional)

Instructions
 

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes. Remove the chicken and set aside.

    Sauté Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Spice It Up: Add the ground cumin, dried oregano, and cayenne pepper, stirring well to combine and toast the spices for about 1 minute.

        Combine Ingredients: Return the chicken to the pot. Add in the rinsed beans, chicken broth, diced green chilies, and corn. Bring to a simmer.

          Cook the Chicken: Cover and let simmer for about 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).

            Shred the Chicken: Remove the chicken breasts, shred them with two forks, and return the shredded chicken to the pot.

              Cream It Up: Stir in the heavy cream or coconut milk, season with salt and pepper to taste, and let it gently heat through, cooking for an additional 5-10 minutes.
