Ingredients
  

1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cans (4 ounces each) diced green chilies

1 can (15 ounces) white beans (cannellini or great northern), drained and rinsed

4 cups low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup corn (fresh, frozen, or canned)

1 cup heavy cream or sour cream (for creaminess)

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime (for zest)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.

    Stir in the minced garlic and diced chicken, cooking for another 5-7 minutes until the chicken is no longer pink.

      Add the diced green chilies, white beans, chicken broth, cumin, oregano, cayenne pepper, salt, and black pepper. Bring the mixture to a gentle boil.

        Reduce the heat to simmer and let cook for 20-25 minutes, uncovered, to allow the flavors to meld and thicken slightly.

          Stir in the corn and heavy cream (or sour cream) and cook for an additional 5 minutes until heated through.

            Adjust seasoning as needed, adding lime juice for extra brightness.

              Serve hot, garnished with freshly chopped cilantro.
