1 cup graham cracker crumbs

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh raspberries, pureed (plus extra for garnish)

1 1/2 cups white chocolate chips

1 tbsp coconut oil (optional, for smooth melting)

Pinch of salt

Fresh raspberries and white chocolate shavings for garnish

Instructions
 

In a bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Gently fold in the raspberry puree until well incorporated. Make sure to leave some small raspberry pieces for a pop of color and texture.

      Gradually add the graham cracker crumbs to the cheesecake mixture, mixing until everything is well combined.

        Refrigerate the mixture for about 30 minutes to firm it up, making it easier to roll into balls.

          While the mixture chills, melt the white chocolate chips in a microwave-safe bowl. If using, stir in the coconut oil for a smoother consistency. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.

            Once chilled, use a small cookie scoop or your hands to portion out the cheesecake mixture, rolling it into 1-inch balls.

              Dip each cheesecake ball into the melted white chocolate, allowing any excess to drip off. Place the coated balls on a parchment-lined baking sheet.

                Before the chocolate sets, garnish with a small piece of fresh raspberry and sprinkle with white chocolate shavings if desired.

                  Refrigerate the cheesecake balls until the white chocolate has hardened, about 15-20 minutes.
