2 lbs beef chuck roast, trimmed and cut into 2-inch pieces

2 tablespoons olive oil

1 large onion, diced

3 garlic cloves, minced

1 cup beef broth

1 tablespoon balsamic vinegar

2 tablespoons tomato paste

2 cups cremini mushrooms, sliced

2 carrots, diced

2 sprigs fresh thyme

1 bay leaf

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large Dutch oven, heat olive oil over medium-high heat. Season the beef pieces with salt and pepper, then brown them in batches until golden on all sides, about 5 minutes per batch. Remove the beef and set aside.

    In the same pot, add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.

      Stir in the beef broth, balsamic vinegar, and tomato paste, scraping the bottom of the pot to deglaze it.

        Return the browned beef to the pot, followed by the sliced mushrooms, diced carrots, thyme sprigs, and bay leaf. Stir to combine.

          Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for 2.5 to 3 hours, stirring occasionally, until the beef is tender and falls apart easily.

            Once cooked, taste and adjust seasoning if necessary. Remove the thyme sprigs and bay leaf before serving.

              Serve the braised beef with its rich sauce over creamy mashed potatoes or with crusty bread to soak up the delicious flavors.
