2 medium zucchinis, grated (about 2 cups)

1 cup granulated sugar

1/2 cup brown sugar, packed

3 large eggs

1/2 cup vegetable oil

1/2 cup unsweetened applesauce

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup chopped walnuts (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, eggs, vegetable oil, applesauce, and vanilla extract. Mix well until smooth and well combined.

      In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

        Gradually add the dry ingredients into the wet ingredients. Stir until just combined; be careful not to overmix.

          If desired, fold in the chopped walnuts and chocolate chips until evenly distributed.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
