1 pound Italian sausage (mild or spicy, based on preference)

4 cups low-sodium chicken broth

2 large russet potatoes, sliced into thin rounds

1 medium onion, diced

3 cloves garlic, minced

1 cup kale, chopped (stems removed)

1 cup heavy cream

1 teaspoon crushed red pepper flakes (adjust for spice level)

Salt and freshly cracked black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and crushed red pepper flakes. Cook for an additional minute until fragrant.

      Add the Italian sausage to the pot, breaking it apart as it cooks. Sauté until browned and fully cooked, about 6-8 minutes.

        Stir in the sliced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are fork-tender.

          Add the chopped kale to the pot and stir well. Simmer for another 5 minutes until the kale is wilted.

            Lower the heat and pour in the heavy cream, stirring to combine. Allow it to heat for an additional 2-3 minutes.

              Season with salt and pepper to taste as needed.

                Serve hot, garnished with fresh chopped parsley.
