1 lb spicy Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 cups kale, chopped

2 medium potatoes, thinly sliced

1 cup heavy cream

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil

Grated Parmesan cheese for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the spicy Italian sausage, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes.

    Add the diced onion to the pot and sauté for another 3-4 minutes, until the onion becomes translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Pour in the chicken broth and bring the mixture to a gentle boil. Add in the sliced potatoes, reduce the heat to a simmer, and cook until the potatoes are tender, about 10-15 minutes.

        Once the potatoes are cooked, stir in the chopped kale and continue to simmer for another 5 minutes until the kale is wilted.

          Lower the heat and carefully stir in the heavy cream. Let the soup warm through for about 2-3 minutes. Season with salt and pepper to taste.

            Remove from heat and let the soup sit for a few minutes to allow the flavors to meld together.

              Serve hot, garnished with grated Parmesan cheese on top.
