Ingredients

Instructions

  1. 1

Season both sides of the chicken breasts with salt and pepper. Dredge each chicken breast in flour, shaking off the excess.

  2. 2

In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  3. 3

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned and tender. Add the minced garlic and cook for another minute until fragrant.

  4. 4

Pour in the chicken broth, balsamic vinegar, honey, and add dried thyme. Stir well, scraping up any brown bits from the bottom of the pan.

  5. 5

Return the chicken breasts to the skillet, nestling them in the mushroom sauce. Cover and let simmer for about 5-7 minutes to allow the flavors to meld and the chicken to reheat.

  6. 6

Remove from heat. Plate the chicken and generously spoon the mushroom sauce over the top. Garnish with freshly chopped parsley.

Chef's Notes

Serve the Chicken Marsala with a side of creamy mashed potatoes or pasta, and arrange the dish on a rustic wooden board for an Italian feel. Add a sprig of parsley on the side for color.
