Ingredients
  

1 pound ground beef

1 onion, finely chopped

3 cloves garlic, minced

1 cup ricotta cheese

1 cup grated Parmesan cheese

1 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

2 packages (9 oz each) fresh cheese tortellini

2 tablespoons olive oil

Fresh basil leaves for garnish

Marinara sauce for serving (optional)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in minced garlic and cook for an additional minute, until fragrant.

      Add ground beef to the skillet. Season with Italian seasoning, salt, and pepper. Cook until browned and fully cooked, breaking it apart with a spatula, about 8-10 minutes.

        Once the beef is cooked, remove from heat and stir in ricotta cheese, grated Parmesan, and sun-dried tomatoes until combined.

          Bring a pot of salted water to a boil and add the fresh tortellini. Cook according to package instructions, usually about 3-5 minutes until they float to the surface. Drain and set aside.

            In a large mixing bowl, combine the cooked tortellini with the beef and cheese mixture, gently tossing to coat all the pieces.

              Serve immediately in bowls, garnished with fresh basil leaves. If desired, warm marinara sauce can be ladled on top for added flavor.
