Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

Zest and juice of 1 lemon

Zest and juice of 1 lime

3 large eggs

1 cup sour cream

1 cup fresh cherries, pitted and halved

½ cup shelled pistachios, finely chopped

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes and then remove from oven to cool.

Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract, lemon juice, lime juice, and zests. Mix well.

Incorporate Eggs: Add the eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.

Add Sour Cream: Fold in the sour cream gently until incorporated.

Fold in Cherries: Carefully add the halved cherries and chopped pistachios to the cheesecake mixture, folding them in gently to avoid breaking the cherries.

Pour into Crust: Pour the cheesecake mixture over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is slightly jiggly but set. The edges should be firm.

Cool and Chill: Turn off the oven, crack the oven door, and let the cheesecake cool for 1 hour. Once cooled, transfer it to the refrigerator for at least 4 hours, or overnight for best results.

Serve: Run a knife around the edges of the cheesecake before releasing the sides of the springform pan. Slice into wedges and enjoy!
