Broccoli and Cheese Casserole

Ingredients
  

4 cups fresh broccoli florets

2 cups sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade)

1 cup plain Greek yogurt

1 cup cooked quinoa (or rice)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring salted water to a boil. Add broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and set aside.

      In a large mixing bowl, combine the cream of mushroom soup and Greek yogurt. Stir until smooth.

        Add the cooked quinoa (or rice), half of the cheddar cheese, garlic powder, onion powder, salt, and pepper to the mixture. Fold in the blanched broccoli until everything is well coated.

          Transfer the mixture into a greased 9x13 inch baking dish.

            In a separate bowl, combine the breadcrumbs, remaining cheddar cheese, and grated Parmesan. Mix well. Sprinkle the breadcrumb mixture evenly over the casserole.

              Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.

                Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
